Easy Bean and Cheese Burritos

Ingredients

  • 6 - 8 flour tortillas
  • 1 can refried beans
  • 1 cup chopped cabbage or cole slaw mix
  • 2 cups shredded cheddar or Mexican cheese
  • 1/2 cup salsa

    Sour cream (optional)

    Directions

  • Line a 8 x 8-inch baking dish with aluminum foil to prevent the burritoes from sticking to the pan.

  • Lay one tortilla flat on a plate or cutting board; spoon 1/4 cup refried beans in the center of the tortilla.

  • Top beans with 1 - 2 Tbsp. cabbage, 1/4 cup cheese, and 1 Tbsp. salsa.

  • Roll tortilla up, folding the ends in as you go and lay seam-side down in the foil-lined baking dish.

  • Cover the top with foil and bake at 350 for 30 minutes.

  • Serve topped with a dollop of sour cream.
