Easy and Frugal Chicken Taco Recipe

Ingredients
1 chicken breast half, uncooked
1 tablespoon coconut oil or olive oil
2 green onions, sliced
dash of cumin
1 15 oz. can black beans, drained but not rinsed
6 taco shells
1/2 cup shredded jack cheese
other toppings as desired
Directions Slice chicken breast into thin slices.
Heat oil in a large skillet. Add chicken and green onion and toss to coat with oil.
Cook over medium to medium-high heat, stirring often, about 10 minutes until chicken is lightly browned.
Sprinkle with cumin; stir.
Lower the heat to medium-low and add the black beans to the pan; stir. Cover and cook until beans are hot and chicken is cooked through.
Warm taco shells if desired and put 1/6 of the mixture into each shell. Top with cheese and any other toppings you desire.
