Easy and Frugal Chicken Taco Recipe

Do you need a quick, easy, and low-cost meal idea? How would you like to be able to feed three people with one chicken breast? This easy and delicious chicken taco recipe makes six tacos (3 servings) and from one chicken breast half. Now, that is a frugal meal!

Ingredients

  • 1 chicken breast half, uncooked

  • 1 tablespoon coconut oil or olive oil

  • 2 green onions, sliced

  • dash of cumin

  • 1 15 oz. can black beans, drained but not rinsed

  • 6 taco shells

  • 1/2 cup shredded jack cheese

  • other toppings as desired

    Directions

  • Slice chicken breast into thin slices.

  • Heat oil in a large skillet. Add chicken and green onion and toss to coat with oil.

  • Cook over medium to medium-high heat, stirring often, about 10 minutes until chicken is lightly browned.

  • Sprinkle with cumin; stir.

  • Lower the heat to medium-low and add the black beans to the pan; stir. Cover and cook until beans are hot and chicken is cooked through.

  • Warm taco shells if desired and put 1/6 of the mixture into each shell. Top with cheese and any other toppings you desire.
