Roasted Garbanzo Bean Recipe

The Easy, Spicy, Crunchy Snack Food that is Frugal and Healthy, too!



I just discovered a spicy, crunchy snack food that has no down side. Unbelievable, I know, but it is true! This delicious snack is:

  • Frugal - Cost is less than $2 for all ingredients; a bit more if you buy organic garbanzos.

  • Healthy - No matter what 'healthy' means to you, this is sure to fit the bill: no sugar, 'bad' fats, or other sketch additives; gluten and grain free; high in protein and fiber.

  • Portable - These are as convenient as nuts; they need no refrigeration and aren't messy to eat. Ideal for kids to eat in the car or as a movie snack.

  • Easy - A child (supervised, of course) could make this recipe. It is just about as easy as it gets. And there are no hard-to-find ingredients. You should be able to get everything at the most limited of grocery stores. Actually, you probably already have all of it. Hey, let's make some right now!

    What you need

  • 1 can garbanzo beans
  • a drizzle of olive oil (about a tablespoon, I didn't measure)
  • salt (again, I didn't measure - a teaspoon or two)
  • seasoning of your choice



    How to do it

  • Open the can of garbanzo beans; rinse and drain them in a colander

  • Lay them out on a towel and blot them dry with another towel

  • Put the garbanzo beans in a mixing bowl and add the olive oil, salt, and seasonings. I used chipotle chili powder, but you can use whatever you want. Garlic powder and/or curry powder might be good. I also thought about using lemon pepper seasoning - I may try that next time.

  • Stir it all up and put it into a large iron skillet or spread it out on a cookie sheet or other baking pan.

  • Bake at 400 for 30 - 40 minutes until the beans are nice and crunchy. (If you use an iron skillet, remove the beans from the pan as soon as you take it out of the oven, or they will continue to cook as the pan cools and they might burn!


    I did discover one downside. It doesn't make enough. Mine are almost gone already.... guess I'll be making some more tomorrow!
