Applesauce Granola Cookies

These nutritious granola cookies are healthy and delicious; perfect for breakfast on the go or a lunchbox treat.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter (1 stick), softened
  • 1 teaspoon vanilla
  • 1/4 teaspoon maple extract
  • 1/2 teaspoon molasses
  • 1 egg
  • 1/2 cup sweetened applesauce
  • 2 cups flour
  • 2 cups apple cinnamon granola
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon

    Directions

  • Preheat oven to 375 degrees.

  • Measure flour by lightly scooping into measuring cup and leveling off. In large bowl, combine brown sugar, butter, vanilla, maple extract, molasses, and egg and mix until well blended.

  • Add applesauce and blend well. Stir in flour, granola, baking soda, salt, and cinnamon and mix well.

  • Drop by tablespoons onto cookie sheets, about 2" apart.

  • Bake at 375 degrees for 10-12 minutes or until cookies spring back when lightly touched in center.

  • Cool 2 minutes, then remove from cookie sheets.



    Makes 42 cookies
