How-to-Catch-a-Husband Hamburger Stroganoff
This meal reeled my husband in like a fish. The kids all love it now too, and it is so simple, so cheap and I always make more than I need to freeze for a later date.
2 lbs. ground beef (I prefer 90% lean)
1 beef stock cube
1 chopped onion (very fine) - optional
1 can chopped mushrooms - optional
1 can cream of chicken soup
1 or 2 8 oz. jar sour cream (depends on what consistency you like)
Salt and pepper to taste
3 cups cooked rice - I prefer sushi rice as it absorbs the flavors better.
Brown ground beef. Drain. In same pan brown the onions then add the mushrooms (optional to leave out if your children won't eat them).
Put the ground beef back in and sprinkle the beef stock cube into it. Add in the soup, sour cream, and salt and pepper to taste. Reduce heat to simmer.
Serve over prepared rice.
Freezes well!! Triple the recipe and freeze portions in gallon baggies for quick meals during the week.
