Kale with Garlic and White Cannellini Beans
(Brookfield, CT USA)
Try this great vegetarian recipe - it is packed with nutrition and inexpensive to make! 2 heads of kale with stems removed
4 cloves garlic, chopped
red pepper flakes to taste (optional)
2 cans cannellini beans (or any other beans you like), drained.
chicken or vegetable broth
Boil or steam the kale in a large pot of water for about 15 minutes; drain and set aside
Saute the garlic and sprinkle with the red pepper (if using)
Add the drained beans and mix well
Add the kale and broth and mix
You can also add:
Sauteed or cooked sausage (turkey or apple chicken sausage)
I added white and black beans
