Kale with Garlic and White Cannellini Beans

Try this great vegetarian recipe - it is packed with nutrition and inexpensive to make!


Ingredients

  • 2 heads of kale with stems removed
  • 4 cloves garlic, chopped
  • red pepper flakes to taste (optional)
  • 2 cans cannellini beans (or any other beans you like), drained.
  • chicken or vegetable broth

    Directions
  • Boil or steam the kale in a large pot of water for about 15 minutes; drain and set aside
  • Saute the garlic and sprinkle with the red pepper (if using)
  • Add the drained beans and mix well
  • Add the kale and broth and mix
  • Enjoy!!

    You can also add:
    Sauteed or cooked sausage (turkey or apple chicken sausage)

    I added white and black beans
