Mediterranean Butter Beans

Mediterranean Butter Beans

4 cans of butter beans, drained
1 can butter beans, undrained
1 small can of tomato sauce
1/2 onion, chopped
2 T olive oil
1 t cinnamon
1 t allspice

Heat oil in a large sauce pan; add onions and saute' until transparent. Do Not brown!!

Add the tomato sauce & spices and simmer for 10 minutes; add the butter beans. Stir. Don't cook overly long, because many of the skins (fiber) on the beans will separate, and you will have naked butter beans! Salt and pepper to taste.

* If you buy your canned products at Aldi's, SaveALot or other discount stores, this recipe will only cost about $5 for 4-6 servings depending if used as an entree' or side dish! Good protein source! Better on 2nd day! Yum!
