Superwife Fresh Peach Crisp Recipe

I call this my Superwife Fresh Peach Crisp Recipe because my husband liked it so much the first time I made it he told me I was a Superwife! It is easy to make, and your family will love it, too! It is a good way to use up peaches that are a bit past their prime.

Ingredients

  • 4 - 6 large fresh peaches, diced (about 6 cups; I didn't peel them)
  • 2 Tbsp. flour
  • 3 Tbsp. sugar
  • 1/4 tsp. cinnamon

    Topping
  • 1/4 cup flour
  • 1/4 cup sugar
  • dash of salt
  • 4 Tbsp. cold butter
  • 1/4 cup rolled oats

    Directions

  • Heat the oven to 350 degrees.

  • Toss the diced peaches with 2 Tbsp. of flour, 3 Tbsp. of sugar, and the cinnamon; Put the mixture into a 2 or 3 quart baking dish.

  • In another bowl combine the 1/4 cup flour, 1/4 cup sugar, and the salt; mix well.

  • Cut the butter into the flour mixture with a pastry blender or a fork until the mixture resembles crumbs.

  • Stir the oats into the mixture and mix thoroughly.

  • Sprinkle the topping over the peach mixture in the baking dish and bake until bubbly and browned on top, about 40 - 45 minutes.
