Superwife Fresh Peach Crisp Recipe
I call this my Superwife Fresh Peach Crisp Recipe because my husband liked it so much the first time I made it he told me I was a Superwife! It is easy to make, and your family will love it, too! It is a good way to use up peaches that are a bit past their prime.

Ingredients
 4 - 6 large fresh peaches, diced (about 6 cups; I didn't peel them) 2 Tbsp. flour 3 Tbsp. sugar 1/4 tsp. cinnamon
Topping 1/4 cup flour 1/4 cup sugar dash of salt 4 Tbsp. cold butter 1/4 cup rolled oats
Directions Heat the oven to 350 degrees.
Toss the diced peaches with 2 Tbsp. of flour, 3 Tbsp. of sugar, and the cinnamon; Put the mixture into a 2 or 3 quart baking dish.
In another bowl combine the 1/4 cup flour, 1/4 cup sugar, and the salt; mix well.
Cut the butter into the flour mixture with a pastry blender or a fork until the mixture resembles crumbs.
Stir the oats into the mixture and mix thoroughly.
Sprinkle the topping over the peach mixture in the baking dish and bake until bubbly and browned on top, about 40 - 45 minutes.
