Homemade Pimento Cheese Recipe
Looking for a pimento cheese recipe like you had in the 'good old days'? Here it is!
I have loved pimento cheese spread since I was a child, but the kind that is sold in supermarkets these days was very disappointing to me as an adult. Then I found this recipe for homemade pimento cheese - yummy! It makes an excellent sandwich or appetizer spread on crackers.
1/3 cup mayonnaise (choose one that is made without hydrogenated oil such as Trader Joe's)
1 2-oz. jar pimentos with liquid
1 tsp. Worcestershire sauce
1 tsp. prepared mustard
1 cup cheddar cheese, cubed (I use raw milk cheese)
Put mayonnaise, pimentos, Worcestershire and mustard with half the cheese in a food processor or blender and blend until smooth.
Add the rest of the cheese and process until smooth.
This makes a delicious sandwich with lettuce and sprouts on crusty whole grain bread. Or try it grilled with a slice of fresh tomato - delightful!
