Using Leftovers - Love Food Not Waste

In the UK, we have a dish called Bubble and Squeak. I don't know where the name comes from, but it's a Monday night special in our house.

After the traditional Sunday roast, Monday night is cold meat, pickles and bubble and squeak.

Traditionally it's mashed potatoes and cabbage mixed together and fried, but we use any of the leftover vegetables from Sunday lunch.

Just heat some oil in a pan, mix all the veggies with the potato and fry. You can make potato cakes if you want to exercise some portion control, and you can add some spices or herbs if you want to zap it up a bit.

Fry till the outside of the potato forms a delicious crust.

The other big benefit is that you know that you have something quick on Monday night after that first day back at work.
