Lentil Soup Recipe: Easy, Healthy and Delicious!


  • 1 C lentils, rinsed
  • 1 28 oz. can crushed tomatoes
  • 2 potatoes, peeled and chopped
  • 2 carrots, peeled and sliced
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 3 cloves garlic, minced
  • 3 bay leaves
  • 1 tsp freshly ground black pepper
  • 3 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 4 C chicken or vegetable broth


  • Place ingredients in 4-quart or larger slow cooker. Stir to combine.

  • Cover. Cook on low 8 to 10 hours or on high 4 to 5 hours, or until lentils are tender. Discard bay leaves before serving.
