Banana Muffin Recipe
Make this banana muffin recipe to use leftover over-ripe bananas or anytime you want a
delicious and healthy treat for breakfast or
snacks.
These muffins are moist and delicious with less sugar than most muffin recipes and wheat germ for extra
whole-grain nutrition.
Ingredients
1 1/2 cups flour
1 tsp. baking powder
1/2 tsp. pumpkin pie spice
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup wheat germ
2 eggs
4 medium very ripe bananas
1/2 cup sugar
1/3 cup melted butter
1/3 cup Nutella
1/2 cup mini chocolate chips (optional)
Directions
Heat oven to 350.
Mix dry ingredients (first 6 ingredients) together and set aside.
In a large mixing bowl, lightly beat the eggs, then add the bananas and mash them, mixing together
with the eggs.
Stir in the sugar, butter, and Nutella and mix until smooth.
Add the dry ingredients and stir just until combined. Stir in chocolate chips if you are using them.
Spoon the batter into a muffin pan.
Bake at 350 until toothpick inserted in the center of a muffin comes out clean, about 30 minutes.
Makes 12 muffins
Serve warm with butter or cream cheese - Yummy!
