Banana Muffin Recipe

Make this banana muffin recipe to use leftover over-ripe bananas or anytime you want a delicious and healthy treat for breakfast or snacks.

These muffins are moist and delicious with less sugar than most muffin recipes and wheat germ for extra whole-grain nutrition.


  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup wheat germ
  • 2 eggs
  • 4 medium very ripe bananas
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 1/3 cup Nutella
  • 1/2 cup mini chocolate chips (optional)


  • Heat oven to 350.

  • Mix dry ingredients (first 6 ingredients) together and set aside.

  • In a large mixing bowl, lightly beat the eggs, then add the bananas and mash them, mixing together with the eggs.

  • Stir in the sugar, butter, and Nutella and mix until smooth.

  • Add the dry ingredients and stir just until combined. Stir in chocolate chips if you are using them.

  • Spoon the batter into a muffin pan.

  • Bake at 350 until toothpick inserted in the center of a muffin comes out clean, about 30 minutes.

    Makes 12 muffins
    Serve warm with butter or cream cheese - Yummy!
