Easy Bean and Cheese Burritos
6 - 8 flour tortillas
1 can refried beans
1 cup chopped cabbage or cole slaw mix
2 cups shredded Cheddar or Mexican cheese
1/2 cup salsa
Sour cream (optional)
Line a 8 x 8-inch baking dish with aluminum foil to prevent the burritos from sticking
to the pan.
Lay one tortilla flat on a plate or cutting board; spoon 1/4 cup refried beans in the
center of the tortilla.
Top beans with 1 - 2 Tbsp. cabbage, 1/4 cup cheese, and 1 Tbsp. salsa.
Roll tortilla up, folding the ends in as you go and lay seam-side down in the foil-lined
Cover the top with foil and bake at 350 for 30 minutes.
Serve topped with a dollop of sour cream.
