I live alone. When I can't eat up all my veggie soup within a couple of days, I puree what is leftover and freeze in 1-cup containers. Not only can I thaw, heat and eat as is, since there is no meat involved, a container can be used to thicken a new soup, used to enhance gravy, or added to casseroles.

That is such a good idea, Carol! I sometimes freeze leftovers in a batch, but had not thought of doing it in portion-sized servings!
