No-crust Artichoke Quiche Recipe
1 6-oz. jar marinated artichoke hearts
1 cup grated cheddar or swiss cheese
cream or milk
Preheat oven to 350. Lightly grease an 8-inch pie pan with a little of the arichoke marinade.
Drain artichokes, reserving marinade.
Dice artichokes and scatter in the pie pan with the cheese.
Combine artichoke marinade with cream or milk to equal 1/2 cup.
Beat eggs with cream mixture and pour into pie pan.
Bake 25 minutes or until quiche is set and lightly browned.
Let stand 5 minutes before cutting into wedges.
